Gelatin` is a pure natural protein substance obtained from collagen, a natural protein present in tendons, ligaments and the connective tissues of mammals. It is produced by action of boiling the connective tissues, bones, and skins of animals, usually cows and pigs.

Gelatin is composed of collagen, which is a protein rich in the amino acids, proline, and hydroxyproline .The percentage composition of gelatin is as follows, 84 to 90% is protein, 1 to 2%  is mineral salts and the rest is water (Bowen 2002). Gelatin does not contain any preservatives or aIDitives. It is free from fats, cholesterol or and purines.

The process of manufacturing gelatin involves removing foreign substance, boiling the material, usually the connective tissues of pigs, cattle or fish. The material is usually boiled using distilled water in aluminum vessel to prevent contamination. The collagen protein is then removed from the bones and is processed to form gelatin. The final product of gelatin is a pure protein.( GME 2012)

Pretreatment of gelatin involves first of all removing all fats and minerals from the raw materials. This is followed by two different pretreatment methods. The two different pretreatment methods that follow depend on the raw materials and final application of gelatin. The pretreatments methods used here are either alkaline procedure or acid procedure. In alkaline procedure the connective tissue of cattle is pretreated with in a process that last for several weeks. This is because connective tissue of cattle is highly interconnected. The process will help bring a gentle change to the collagen structure. After this treatment the collagen can be separated from the rest of the raw materials. This is done by dissolving the collagen into warm water since at this stage the collagen will be soluble in warm water. In the acid procedure the connective tissue of a pig skin is pretreated with acid. The treatment takes one day since the collagen connective tissue from pig skin is not so heavily interconnected. Collagen is then extracted by subsequent neutralization and intensive rinsing out of the salt.

After the pretreatment of gelatin, it is then extracted from the pretreated raw materials. The pretreated raw materials are treated with hot clean water and gelatin extracted in several stages. The final product in its purest form is brittle, transparent, colorless, tasteless, and odorless.

Collagen is used for various purposes both in products and application. Some of the technical uses of genital includes the following; in pharmaceutical industry genital is used in the production of capsules and the coating of tablets .It can also be used to bring cohesiveness and hardness to tablets. It is also used in blood plasma expander and for vaccination. In photographic industry gelatin is in amateur films, colour paper, graphic films and x-ray films. In food industry, it is used in drying and preserving of fruits and meats, in glazing of coffee and in preparation of powdered milk and other powder foods.

Other uses of gelatin includes; gelatin is used as food as it is rich in proteins, in the manufacture of matches, making of fertilizers, restoration of buildings, renovation of buildings and in the paper industry. According to Kraft Foods Gobal, 2012, nutritional value of gelatin is that it is an important source of proteins, fats, and carbohydrates. Its richness in nutrients makes it an important food factor. Gelatin is a pure, a natural and healthy ingredients. This makes an ideal alternative to other ingredients.

The safety concern of genital is mainly the source of raw materials that is used in the manufacturing of gelatin. The raw materials should come from a registered slaughterhouse in which all animals are examined.
