What carbohydrates are

Carbohydrates are one classification of the three major calories (energy sources) which the body utilizes and they include starches and sugars. The chemical definition of carbohydrates is that they are neutral compounds of oxygen, hydrogen and carbon. The human body needs more than 50% carbohydrates in a day to accomplish all the necessary activities (Stick & Williams 2008).

The difference between simple and complex carbohydrates

Carbohydrates are composed of sugars and are classified into simple or complex. The preferred source of energy by our bodies is glucose and all sugars in the body are converted into this form which is the main sugar in the majority of foods. This is according to the chemical structure of the carbohydrate which determines the rate at which the digestion and absorption of sugar takes place (Bochkov 1991). Simple carbohydrates (simple sugars) are composed of either one or two sugars as the name suggests and as a result their absorption is very fast. Examples include; candy, the normal sugar, syrups, soda, milk and fruits just to name a few (Stick & Williams 2008). Those with one sugar chain are glucose, galactose and fructose while the double sugars are the sucrose.  On the other hand, complex carbohydrates (starches) are composed of three or more sugars that are linked together or simply it is a chain or a bond of a number of sugars. These take quite a long time to digest and once they are digested, they take a long time in the bloodstream. Examples include; chick peas, broccoli, kidney beans, bread, rice, oatmeal and pasta among others. They have higher amounts of minerals and vitamins than the simple sugars (Bochkov 1991).
